How To Make Coffee Chocolate chip Cookies

This Coffee Chocolate Chip Cookie recipe is extra decadent when using a broken up bar of Coffee + Chocolate from Honeymoon Chocolates.

The terroir of the coffee and chocolate are very apparent as you bite into the cookie, and the taste of the cookies will slightly change when using bars from different origins. If you can’t get a bar from them, we have other options in the notes below.

Coffee Chocolate chip Cookies Ingredients

  • 1 cup butter (2 sticks)

  • 1 1/2 cups brown sugar (packed)

  • 1 large egg + 1 egg yolk

  • 1 tbsp vanilla extract

  • 3 cups flour

  • 1 tsp baking soda

  • Pinch of kosher salt

  • 4oz rough chopped chocolate

  • A sprinkle of flakey sea salt

Coffee Chocolate chip Cookies Directions

  • Preheat oven to 375, line cookie sheets with parchment paper
  • Melt butter in saucepan – do not brown. Pour over brown sugar in mixing bowl
  • Mix and let sit 5 minutes
  • Add egg + egg yolk, stir until combined
  • Stir in vanilla extract
  • Add flour, baking soda, and salt. Stir until just combined. (dough will be thick at this point)
  • Stir in chocolate chips
  • Scoop onto baking sheets and top with flakey sea salt (optional)
  • Bake for 7-10 minutes until the edges are golden brown
  • Transfer to a cooling rack to completely cool

Notes

  • This recipe makes about 15 large cookies, or two dozen smaller cookies.
  • Dough can be portioned out and frozen for up to a month
  • The dough is very dense, so it gets a little tough to stir. We recommend using a wooden spoon to stir in chocolate chips
  • If you use cold brew concentrate, make it as strong as possible (while extracting evenly!)
  • If you have an espresso machine or Nespresso machine, put 1 shot of espresso in the dough mixture (this will also help moisten up the dough a little)
